Outside the Breadbox
Well, “the bread” made our newsletter again! Everyone reserved and stocked up on their favorite Outside the Breadbox Vegan Oat Bread last week, and we apologize we are out of stock again. The shipping and delivery schedules are back to normal, and we will receive our bread delivery every Friday afternoon. If you would like to reserve bread, please call the bakery. If you want to pick up, check with us on Friday after 2:00pm. We have placed another BIG order to delivery this week. We believe the bread shortage will work itself out as everyone gets stocked back up. Thank you for your patience in this matter as we realize many of you are out of your favorite bread!
Special Event - Juice Therapy Class with Nicole Fey
Join us Monday, January 18 from 1:30 - 3:00pm* for a fun health event! BYL is hosting Nicole Fey, certified holistic health coach and author, to discuss juicing. We thought a health and juicing class might be a good fit for the new year!
The cost for the lecture and a delicious juice drink is $25 per person. Please call the bakery at 865-288-3193 to reserve your space. Event fee is due on sign up and is refundable through January 14. Space is limited. The event fee is due at time of reservation.
Nicole will be signing her new book, The Ultimate Juicing & Holistic Health Program at the bakery immediately before and after the class. Copies of Nicole’s book will be available for purchase at the bakery. You are welcome to drop in immediately before or after the class for a book even if you cannot attend the class.

I’ll volunteer to be the first BYL person. Hi, I’m Kelly! I have a background in chemical engineering and most recently worked in the construction industry. I still do that, but my full time passion now is this awesome little bakery called Benefit Your Life. Maybe you’ve heard of it? In the interview below, I describe my path to eating gluten free and how it has helped me.
How long have you eaten gluten free?
I’ve eaten gluten free since March 2012, and I’ve eaten a paleo template diet since January 2013. That year my new year’s resolution became a total life changer!
Why do you eat gluten free?
I didn’t have any serious health issues, but I had some pesky health issues I had just learned to tolerate. I assumed not feeling 100% was just a normal part of life. I was recommended paleo by a friend who saw great improvements in her lupus symptoms by eating this naturally gluten free and processed sugar free diet. I had tried lotions, potions, creams, oils and steroid shots for my psoriasis, but nothing worked. When I went gluten free, my psoriasis started healing but wasn’t 100%. I saw dramatic improvements in my heartburn/reflux, frequency of migraines and healthy weight loss. In January 2014, I tried an autoimmune protocol diet + eggs after learning psoriasis was an autoimmune condition where my immune system was attacking my skin. This version of a restricted paleo diet put my psoriasis into remission. I now eat a naturally gluten free paleo template diet with white potatoes and occasional rice. These are considered paleo gray area foods, but I have added them back into my diet as they seem to work well for me.
Are you celiac?
I have not been tested for celiac disease, but I’ve enjoyed such health improvements through my naturally gluten free paleo diet that I don’t ever cheat and eat gluten. My autoimmune condition will never be cured, but I can keep it in remission through my diet and lifestyle choices. I feel like the science supports a gluten free diet as being a good choice for longterm health. With my engineering background, I love to research nutrition and health topics and will happily provide all my geeky knowledge if you ever want to chat in the bakery.
How did you find BYL?
I discovered BYL when looking for gluten free food in Knoxville. It became a great stop to get an occasional treat. I do indulge in a delicious, gluten free, non-paleo treat occasionally, but I am so glad the bakery has paleo baked goods as well. When I found BYL, I had never had gluten free baked goods that taste like the real thing. I also loved the BYL philosophy to use more natural and high quality ingredients. Now, as an owner of BYL, I plan to continue this mission to provide our customers with safe, delicious gluten free and allergy friendly treats they can enjoy.

A Gluten Free Diet is One Step in a Program to Reversing Memory Loss Associated with Alzheimer’s Disease
Many of us have experienced the devastating effects of Alzheimers, either personally or through a friend or loved one. Scientists continue their work studying the development and progression of Alzheimer’s disease and possible treatments and cures. Could diet and lifestyle changes attribute to a reversal in memory loss associated with Alzheimer’s?
In 2014, a UCLA and Buck Institute study showed a reversal in cognitive decline in nine of 10 patients who participated in a specially designed therapeutic program. The 36-point program focused on improving diet and lifestyle behaviors and habits, providing brain stimulation, including a specific pharmaceutical and supplemental protocol and other steps that affect brain chemistry.
The therapeutic program in the study was customized to each patient. One patient’s program consisted of diet modifications including eating gluten free and elimination of processed foods. The paper’s author stated a more controlled clinical trial is needed; however, the study makes early intervention steps, which include dietary changes, look hopeful. It is estimated by 2050, Alzheimer’s will affect 13 million Americans. Read the full article here.
